1 Minute Nutrimeal Mug Cake
Ever since I learned how to eat low glycemic I've successfully broken up with refined sugar. But that doesn't mean that I don't love desserts!
I've been playing with this recipe ever since Brie Wohlers and I tested it out, our hilarious trial run is on YouTube
Since then, I've enjoyed this for breakfast, in the evenings when I crave a treat and whenever the kids asked for it!
Enter- the Nutrimeal mug cake! 💃
What is the Nutrimeal mug cake?
A single serve cake that uses a combination of Nutrimeal, eggs (or vegan substitute), milk and other extras to create a light, fluffy and gooey mug cake.
Unlike traditional mug cakes, the Nutrimeal mug cakes are super low carb, packed with protein and made without flour or sugar.

Microwave option
Oven option
Follow as above, but bake in the oven for 8-15 minutes, depending on consistency desired- Mug cake is cooked once a toothpick comes out 'just' clean from the center.
Notes
* For the vegan option, you won't need any flax eggs/egg substitute- Simply omit and slowly add milk of choice until a thick batter is formed. Microwave/bake until 'just' cooked in the center.
